It is amazing to see how quickly interest in small-batch, artisanal cured meats has grown in the recent past. More and more of our customers are seeking out delicious charcuterie, and we are constantly learning about new charcuterie producers opening up shop all around the country. We’ve seen a boom in production of both classic, traditionally styled meats and new, more experimental products. We are constantly on the hunt for the best charcuterie we can find, and all of us here at The Wine Source were thoroughly impressed when we first tasted products from Smoking Goose Meatery. Based out of Indiana, this charcuterie producer is committed to working with locally raised animals and refuses to cut corners during production (you can read more about them here).
With my first bite of Smoking Goose’s Dodge City Salame, I knew we had stumbled onto one of the best charcuterie producers in the US. Dodge City is a large format pork salami that is very coarsely chopped and flavored with fennel pollen and pink peppercorn. All of the ingredients are top notch and the flavors are perfectly balanced. The peppercorn and fennel provide a bit of spice and herbs and that compliments the beautiful taste of the pig, and lends the salami a certain addictive quality.
And little did we know that was only the beginning. Since then we have tried several other products from Smoking Goose, and hope to continue to grow our selection at the store. We offer their duck prosciutto along with two smaller outside-the-box style salamis: Stagberry (which is an elk salami flavored with blueberry and mead) and Gin & Juice (a pork and lamb salami flavored with juniper).
