Nocetto di Capra is picnic-ready, and with its light floral notes, definitely gives Nettle Meadow’s Kunik a run for its money. Nocetto is made from the milk of Orobica goats in Lombardy¬† and comes to us in charming rounds that weigh about a pound each. It’s bloomy rind is often speckled with springy yellow spots, and it’s bright white paste just begs to be spread. It’s a goat’s milk cheese that’s not too goaty, with a milky richness that doesn’t give way to blandness, just a subtle earthy depth of flavor that sweetly and softly tip-toes across the tongue.
